Twiced Baked Potato and Steak Casserole

1 1/2 lbs small red potatoes, baked and cubed into bite size

1 lb steak tips or stir fry steak strips, cooked

cooked crumbled bacon

salt

pepper

chives

3 cups sour cream

1 cup frozen peas

1 cup frozen corn

1/2 cup onion, chopped

2 cups shredded mozzarella

2 cups shredded cheddar

~Preheat oven to 375 degrees.

Place half the potatoes in the bottom of a casserole or baking dish. Season with salt, pepper and chives.

Spread half the steak over the potatoes. Then half the crumbled bacon.

Add half the frozen corn, peas and onions.  Spread half the sour cream on top.

Next add half the cheddar and half the mozzarella cheeses to the top.

Layer the rest of the potatoes. Continue the layers as above.

Bake uncovered, 20-25 minutes.

Lori’s Island Steak

1-2 lbs steak tips

1 bottle Thousand Island dressing

1 small jar apricot jam

chili powder

garlic powder

1 cup pineapple chunks (no juice)

1 cup mandarin oranges (no juice)

frozen veggies (here I used corn, peas and broccoli)

boil-in-bag rice

~Put steak tips, veggie and fruit in a baking dish.

In a small bowl mix half a bottle of Thousand Island dressing, half a jar of apricot jam, about 1 tsp garlic powder, and 1 tsp chili powder.

Pour half the mixture of the meat, veggies and fruit.  Set remaining half aside.

Cover baking dish and bake at 350 degrees for 30 minutes.

Uncover, and pour the remaining dressing mixture on top.

Leave uncovered, and bake another 20-30 minutes.

Cook rice according to box directions.

Serve the meat mixture over top of the rice.

Salisbury Steak

1  (10.5 oz) can of condensed french onion soup

1 1/2 lbs ground beef

1/2 cup dry bread crumbs

1 egg

1/4 tsp salt

1/8 tsp pepper

1 tbsp all-purpose flour

1/4 cup ketchup

1/4 cup water

1 tbsp Worcestershire sauce

1/2 tsp mustard powder

Mix together 1/3 cup french onion soup, hamburger, bread crumbs, egg, salt and pepper. Shape into oval patties.

In a skillet over medium-high heat, brown both sides of the patties, then drain the excess fat and grease.

Mix together remaining soup and flour.  Then add ketchup, water, Worcestershire sauce, and mustard powder.  Pour over patties in skillet.  Cover and cook for 20 minutes, stirring occasionally.
