Meatball Stew


18-20 meatballs, or 12 oz bag

3 potatoes, peeled and cubed

2 cups of carrots, cleaned and sliced

1 medium onion, finely chopped

3 celery stalks, cleaned and chopped

1 can of tomato soup

1 can of beef gravy

1 cup of water

1 envelope of onion soup mix

2 packets of Beef Herbox

~ Place all in the Crock Pot and cook on low 5-6 hours.

*I used a 24 ounce bag of meatballs, and 2 envelopes of powder beef gravy, so I also used 4 cups of water instead of one to create more liquid.


Cheeseburger Soup


1 1/2 quarts of water

2 cups cubed potatoes (your choice, I use red and leave the skins on)

2 small carrots, grated

1 small onion, chopped

1 small green pepper, chopped

1 garlic clove, minced

1 Tbsp beef bullion, or 1 packet of Beef Herbox

1/2 tsp salt

1 lb hamburg, cooked and drained

2 1/2 cups of milk

3 Tbsp flour

8 oz Velveeta cheese

1/2 lb cooked and crumbled bacon, or real bacon pieces

~ In a large pan, combine all ingredients up to and including salt. Bring to a boil. Reduce heat, cover and simmer for 15-20 minutes, until potatoes are cooked.

Stir in hamburger and 2 cups of milk. Heat through.

Combine flour and 1/2 cup of milk and stir until smooth.  Gradually stir into soup. Bring to a boil. Cook and stir for 2 minutes and the soup is thick and bubbly.

Reduce heat and stir in cheese. Continue stirring until all is melted and blended well.

Top with bacon and crackers.

Roasted Bacon Ranch and Cheese Potatoes


2 lbs potatoes, unpeeled, washed and chopped 1/2 cup ranch dressing (bottled, not dry) 1/4 cup shredded cheddar + extra 1/4 cup crumbled, cooked bacon 1 Tbsp dry dill weed 3 scallions, chopped Salt Pepper Cooking spray ~Preheat oven to 350°. Mix ranch, dill, cheese, and bacon. Add in potatoes. Sprinkle generously with salt and pepper. Toss to coat. Spoon into a greased 9×13 dish. Cover with foil. Bake 60 minutes, stirring after 30. Remove foil. Raise temp to 400. Stir again. Bake 15 minutes, then sprinkle with more cheese. Bake a few minutes more to melt and bubble cheese. Top with scallions and sour cream.

Crazy Delicious Potatoes


Potatoes (the original called for peeled and scrubbed, but I love red potato skins, so I just scrubbed them and cut slits all over.) Fresh 4 minced garlic, or garlic powder to taste Chicken or vegetable broth Butter Parsley Salt and pepper Lime or lemon juice (optional) ~Preheat oven to 350°. Place potatoes snuggly into a baking dish. In a saucepan, heat chicken broth (enough for about 1 inch in the baking dish) and garlic until warm and flavors are blended. Pour over potatoes. Season with salt and pepper. Place a pat of butter on top of each potato. Bake 40 minutes or until potatoes are tender. Sprinkle with parsley and drizzle with lemon or lime juice.

Buffalo Chicken and Potato Casserole

2-3 boneless, skinless chicken breast, cut into 1 inch strips

1/3 cup buffalo sauce, your choice

1 cup frozen corn

5 cups grated potatoes, or frozen hash browns if desired

1 cup ranch or blue cheese dressing

1 10 oz can of cream of chicken soup

1 cup shredded cheddar cheese

1 cup Panko bread crumb


~Heat oven to 375 degrees.

Spray a 13 x 9 baking dish with cooking spray.

Mix chicken, corn, and buffalo sauce in a bowl.  Spread in a single layer in baking dish.

In the same bowl, mix the potatoes, dressing, cheese, and soup until well combined.  Spread over chicken mixture.

Sprinkle Panko crumbs over the top.

Cover with foil and bake for 30 minutes.  Uncover and bake 20-25 minutes more.

Country Meatloaf and Mashed Potato Casserole


1 to 1 1/2 lbs ground beef

1/2 cup chopped onion

2 slices white bread, torn into chunks

1 egg

1/3 cup ketchup

1 tsp Worcestershire Sauce

1/2 tsp salt

1/2 tsp pepper

3 cups seasoned mashed potatoes


~ Preheat oven to 350 degrees. Coat an 8 inch baking dish with cooking spray.

Combine all ingredients except the mashed potatoes. Place mixture in baking dish and bake for 35 minutes.  Drain off any fat and grease.

Even spread mashed potatoes on top of meat.  Return to oven and bake for another 30 minutes.

Twiced Baked Potato and Steak Casserole

1 1/2 lbs small red potatoes, baked and cubed into bite size

1 lb steak tips or stir fry steak strips, cooked

cooked crumbled bacon




3 cups sour cream

1 cup frozen peas

1 cup frozen corn

1/2 cup onion, chopped

2 cups shredded mozzarella

2 cups shredded cheddar

~Preheat oven to 375 degrees.

Place half the potatoes in the bottom of a casserole or baking dish. Season with salt, pepper and chives.

Spread half the steak over the potatoes. Then half the crumbled bacon.

Add half the frozen corn, peas and onions.  Spread half the sour cream on top.

Next add half the cheddar and half the mozzarella cheeses to the top.

Layer the rest of the potatoes. Continue the layers as above.

Bake uncovered, 20-25 minutes.
