Honey Balsamic Chicken

3 chicken breasts cut into strips or chunks
1/2 cup Balsamic Vinegar
2 cloves of garlic, minced
4 Tbsp of EVOO
Salt & Pepper
2 Tbsp butter
4 Tbsp Balsamic Vinegar
6 Tbsp honey

~ Marinate chicken in 1/2 cup Balsamic Vinegar, garlic, 2 Tbsp EVOO, and a pinch of salt and pepper. Marinate in refrigerator for at least 30 minutes.
Heat 2 Tbsp EVOO in a skillet over medium heat. Cook chicken pieces about 3 minutes each side, or until browned and cooked through. Remove from pan.
Turn heat down to med-low, add butter and 2 Tbsp of Balsamic Vinegar. Stir all together including sticky bits on the bottom of the skillet. Add in honey and increase the heat. Simmer about 5 minutes.
Season sauce with salt and pepper. Add chicken back to skillet and toss to coat.

Sticky Pork Chops

4 pork chops
3/4 cup of soy sauce
1/2 cup of honey
1/2 Tbsp ground ginger
2 garlic cloves, minced
1 chili, finely chopped
Juice of 1 lemon

~Mix all ingredients together except the chops. Place chops in a bowl and pour sauce over. Marinate 20 minutes to 2 hours.
Fry in a skillet, browning on both sides, and basting in the remain sauce. Pour on rest of the sauce, turn down the heat, cover and let simmer until cooked through.

Could also be used on the grill!

Parmesan Honey Pork Roast

2-3 lb pork roast

2/3 cup Parmesan cheese

1/2 cup honey

3 Tbsp soy sauce

2 tsp dry basil

1 tsp minced garlic

2 Tbsp olive oil

1/2 tsp salt

2 Tbsp cornstarch

1/4 cup cold water

 

~Spray the inside of the slow cooker with cooking spray.  Place the roast inside.

Mix all ingredients up to and including the salt.  Pour over roast.

Cook on low for 6-7 hours.

Remove roast and keep warm.  Skim off the fat from the sauce.  Pour the sauce into a small pan.  Mix the water and the cornstarch until well dissolved.  Gently mix the cornstarch and water with the sauce.  Bring to a boil, cook and stir for 2 minutes.  Serve over roast.

Honey Baked Chicken

6 thin chicken breasts, or 3 thick, then cut in half

garlic powder

1/2 cup of honey

1 tbsp prepared mustard

1/2 tsp salt

2 tbsp butter

~Preheat oven to 375 degrees.

Place chicken in a small glass baking dish, so it is sort of all smashed together, but in a single layer.

Season with garlic powder.

In a saucepan, mix the honey, butter, mustard and salt and heat until all is melted and mixed together.  Don’t boil.

Pour honey mixture over chicken.

Bake for 50 minutes.
