Cheeseburger Soup

1 1/2 quarts of water

2 cups cubed potatoes (your choice, I use red and leave the skins on)

2 small carrots, grated

1 small onion, chopped

1 small green pepper, chopped

1 garlic clove, minced

1 Tbsp beef bullion, or 1 packet of Beef Herbox

1/2 tsp salt

1 lb hamburg, cooked and drained

2 1/2 cups of milk

3 Tbsp flour

8 oz Velveeta cheese

1/2 lb cooked and crumbled bacon, or real bacon pieces

~ In a large pan, combine all ingredients up to and including salt. Bring to a boil. Reduce heat, cover and simmer for 15-20 minutes, until potatoes are cooked.

Stir in hamburger and 2 cups of milk. Heat through.

Combine flour and 1/2 cup of milk and stir until smooth.  Gradually stir into soup. Bring to a boil. Cook and stir for 2 minutes and the soup is thick and bubbly.

Reduce heat and stir in cheese. Continue stirring until all is melted and blended well.

Top with bacon and crackers.

Hamburger Soup

1 lb hamburger

1 cup onions, chopped

1 cup pepper, chopped

8 oz mushroom pieces

1 cup carrots, chopped

1 cup celery, chopped

1 cup frozen corn

1 cup frozen peas

2 garlic cloves, minced (or 1/2 tsp dry)

4 packets Beef Herbox

5 cups water

14-15 oz can tomato sauce

2 14.5 oz cans diced tomatoes, with juice

1/2 tsp salt

1 tsp basil

3 tbsp ketchup

~Brown hamburg, onions, peppers and mushrooms.

Combine all ingredients in a large pot and bring to a boil.

Reduce heat and simmer for 1 1/2 hours.

*This can also be done in a slow cooker all day on a low setting.

Rodeo Burgers

1 lb of hamburger

1 egg

1/2 cup crunched up cheddar flavor french fried onions

1/4 cup A1 Steak Sauce

1/4 tsp garlic powder

1/4 tsp onion powder

1/4 tsp red pepper flakes

1/4 tsp seasoned salt, or broiled steak seasoning

bag of frozen onion rings

bbq sauce

sliced cheese

hamburger rolls

 

~ Preheat oven to 350.

Mix hamburger and all ingredients up to and including the seasoned salt.

Form into patties, and place on a baking sheet, with edges, so grease doesn’t drain into your oven.

Bake for 30 minutes.

Prepare onion rings according to directions, OR place in oven the same time as the hamburgers.  Leave in until crispy.  If they are not done with the burgers are, turn the heat up to 400 after you remove the burgers.

Remove burgers and immediately place cheese slices on each burger to allow it to melt.

Place burger on bun, and put a few onion rings on top of the burger. Pour bbq sauce over the top.

 

Stuffed Pepper Soup

4-5 large bell peppers (any colour you choose)

1 lb of hamburger

1 pint size can of stewed tomatoes

3 24 oz jars of spaghetti sauce

boil in bag rice

shredded cheddar

~Brown hamburger, drain thoroughly.  Place in a slow cooker.

Chop up peppers into bite size pieces and add to the slow cooker.  Dump in the can of stewed tomatoes.

Cook on low for about 3 hours, then turn to high for about 20-30 minutes.

Cook rice according to box directions.  Mix into soup.

Serve with shredded cheddar on top.

You could also do this on a simmer setting in a pot on the stove.

Sweet Chili

1 lb ground beef

1 tsp onion powder

salt and pepper

1 can (45.5 oz) dark red kidney beans

1 can (28 0z) baked beans

1 can (10.75 oz) tomato soup

1 can (15 oz) tomato sauce

1 can diced tomatoes

small onion, diced

3 tbsp brown sugar (I use Splenda brown sugar, which is only about 1 tbsp)

shredded cheddar

~  Brown hamburger with onion powder, salt and pepper.  Drain

In a big pot mix all ingredients except cheddar.  Cook on medium-low heat, until hot the whole way through.  Top with cheddar after serving.

This is also good if you cook white rice on the side and pour chili over once done.
