Shrimp Tortellini Skillet

2  12 ounce packages of precooked shrimp (thawed)

1  14 ounce bag of tortellini (thawed)

1 1/2 cups cooked broccoli (or thawed from frozen)

1 4 ounce can of mushroom pieces

2 – 2 1/2 marinara or spaghetti sauce

salt and pepper

Extra virgin olive oil

3/4 cups shredded mozzarella

Parmesan cheese

~ Set broiler on high.

Cook the tortellini according to package directions and set aside, drain, and set aside.

Toss shrimp, broccoli, mushrooms with a few tablespoons of olive oil, and season with salt and pepper. Place in a large oven safe skillet.

Cook until heated through. Remove from heat.

Toss tortellini with marinara sauce and add to the skillet. Mix all well.

Sprinkle a few tablespoons of Parmesan over the top, followed by the shredded mozzarella.

Place in oven and broil until cheese is bubbly and golden brown.


Asian Salmon


1 lb salmon, thawed
1/3 cup soy sauce
1/3 cup brown sugar
1/3 cup water
1/4 cup vegetable oil
Lemon Pepper to taste
salt to taste
Garlic powder to taste

~Preheat oven to 400°.
Mix all ingredients except salmon.
Place salmon in a small baking dish. Pour sauce over.
Bake 20 minutes, until salmon flakes.

Baked Lemon Butter Salmon

~Preheat oven to 350 degrees.

Lay tin foil sheet flat.  Place lemon slices on the sheet and salmon on the lemons.

Butter chunks on top of salmon.

Season with salt and pepper.

Seal up tin foil and place in oven.

Cook 25 minutes.

Crispy Baked Haddock and Cod

3/4 cup milk

2 tsp salt

3/4 cup bread crumbs

1/2 cup Parmesan cheese

1/4 tsp thyme

4 haddock or cod fillets

1/4 cup melted butter

lemon juice

~Preheat oven to 500 degrees.

Mix milk and salt.  In a separate bowl mix the bread crumbs, Parmesan cheese and thyme.

Soak each fillet in the milk and salt.

Then coat each in the bread crumb mixture.

Place a wire baking rack in a baking dish.

Set each fillet on the wire rack.

Drizzle first with the melted butter, and then with a little lemon juice.

Bake for 20 minutes.

Teriyaki Tuna Steaks


1 lb of tuna steaks

3 tbsp brown sugar

3 tbsp olive oil

2 tbsp apple cider vinegar

2 tbsp cooking sherry

2 tbs pineapple juice

1 tsp garlic powder

1 1/2 tsp ground ginger


~Place the tuna steaks in a baking dish.

Mix all other ingredients together well.

Pour over top of the tuna steaks.

Bake covered at 350 degrees for 12 minutes.

Uncover and bake an additional 10 minutes.

Crab Cakes

1 lb precooked crab meat

2 cups crushed club crackers

1 egg, beaten

1 tbsp mayo

1 tsp prepared yellow mustard

1 tsp Worcestershire sauce

1 tbsp Old Bay

2 tbsp butter

~ mix crab meat (leave in chunks), crackers, egg, mayo, mustard, Worcestershire sauce and Old Bay in a mixing bowl.  Form into patties.

Heat butter in a skillet and brown patties 3-4 minutes on each side.

Catfish Cakes

1 lb thawed catfish

1 medium chopped onion

1 tsp prepared yellow mustard

1 tbsp Miracle Whip

1/2 tsp Old Bay

2 1/2 cups crushed club crackers

1 egg

1 cup veggie oil

~  Boil catfish in enough water to cover, about 10 minutes, until it is flaky.

Drain water, and mash fish in a mixing bowl.  Mix in all ingredients except the veggie oil.  Form into patties.

Heat oil in a skillet over medium-high heat.  Brown patties 3-4 minutes on each side.

Remove from oil, and drain oil off patties on a paper towel.
